This is a healthy, flavor-packed, low carb meal with tangy vinegar, creamy tzatziki, and the delightful crunch of fresh peppers.

Tilly Salad is easy and quick to make.

Main kitchen equipment

  • Cutting board and knife

Ingredients

  • ½ red bell pepper
  • ½ yellow bell pepper
  • 1/4 yellow onion
  • 3 oz. pepper-jack cheese
  • 1 can of chicken breast
  • Mixed baby lettuce, enough to fill half the bowl

Dressing

  • Tzatziki sauce (to taste, maybe ¼ cup)
  • Balsamic vinegar (to taste, maybe 1 tbl divided into two bowls)
  • Pinch of salt (to taste)

Instructions 

  1. Prep your ingredients: Cube the cheese and chop the bell peppers into bite-sized pieces. Slice the onion into small pieces. Drain the liquid from the canned chicken and break it up into smaller pieces.
  2. Directly in two bowls (for 2 servings): Layer mixed baby lettuce, cut peppers, cheese, and canned chicken breast.
  3. Add the dressing: top salad with a large dollop of tzatziki sauce, a splash of balsamic vinegar, and a pinch of salt.
  4. Stir and serve: Enjoy!
