This is a healthy, flavor-packed, low carb meal with tangy vinegar, creamy tzatziki, and the delightful crunch of fresh peppers.

Ingredients
- ½ red bell pepper
- ½ yellow bell pepper
- 1/4 yellow onion
- 3 oz. pepper-jack cheese
- 1 can of chicken breast
- Mixed baby lettuce, enough to fill half the bowl
Dressing
- Tzatziki sauce (to taste, maybe ¼ cup)
- Balsamic vinegar (to taste, maybe 1 tbl divided into two bowls)
- Pinch of salt (to taste)
Instructions
- Prep your ingredients: Cube the cheese and chop the bell peppers into bite-sized pieces. Slice the onion into small pieces. Drain the liquid from the canned chicken and break it up into smaller pieces.
- Directly in two bowls (for 2 servings): Layer mixed baby lettuce, cut peppers, cheese, and canned chicken breast.
- Add the dressing: top salad with a large dollop of tzatziki sauce, a splash of balsamic vinegar, and a pinch of salt.
- Stir and serve: Enjoy!
